Feeding a family of twelve on a small farm is no small task. Between farm chores, creative projects, and homeschooling, our mornings are hectic. In this post, I'll share our favorite quick and nourishing breakfast recipes that keep our family fueled and ready for the day.
The Importance of Quick Breakfasts As a family with many directions to go in the morning, getting breakfast out quickly is essential. Whether it's summer with kids wanting to play or school days with classes and practices, our breakfasts need to be fast, nutritious, and satisfying.
Parfaits: A Nutritious Start
Parfaits are our go-to for a quick and versatile breakfast. We layer yogurt, granola, honey, and a mix of fresh or frozen fruits. Sometimes, we add scrambled eggs on the side for extra protein. It's a simple, yet delicious way to start the day, and everyone can customize their parfait to their liking.

Multigrain Porridge: Hearty and Filling
Hearty and Versatile Our multigrain porridge is another breakfast favorite. Using a blend of kamut, millet, and amaranth, we cook the grains with water, nondairy milk, salt, and bananas in the Instant Pot. After pressure cooking, we stir in whipped eggs for added creaminess. Topped with a homemade fruit compote from our orchard, this dish is a comforting and filling start to the day. Multigrain porridge is a breakfast staple.

Egg Scrambles: Fast and Protein-Packed
With our fifty chickens, we have an abundance of eggs. Egg scrambles are a quick and easy breakfast solution. We sauté chopped onions, scramble a large batch of eggs, and sometimes add a splash of milk for extra fluffiness. Paired with sourdough bread, it’s a savory and satisfying meal that comes together in no time.
Make-Ahead Egg Dishes: Convenience at Its Best
To save time during busy mornings, we prepare make-ahead egg dishes on weekends. Using leftovers like ham, turkey, ground beef, or bacon, we mix in vegetables and pour over a couple dozen eggs. Topped with cheese or potatoes, these dishes are baked and cut into squares, ready to be stored in the freezer. They’re perfect for a quick, reheatable breakfast throughout the week. We often make different flavor combinations, such as chicken and spinach with Parmesan or meat and potatoes with rosemary, to keep things interesting.

Warm Drinks with the French Press:
Cozy and Comforting We love using our insulated French press to keep our warm drinks warm throughout the morning. Whether it's for brewing coffee, making a half-caf blend with mushroom coffee, or preparing loose leaf teas, the French press is incredibly versatile. Since I'm avoiding caffeine right now, I often brew herbal coffee, sweetened with stevia and topped with oat milk or raw cream. For a soothing option, we might make green tea or a comforting mix of apple cider vinegar, honey, and cinnamon for anyone feeling under the weather. My current favorite is starting the day with a nourishing cup of bone broth.

The Joy of Family Breakfast Time
Breakfast is more than just a meal for us – it’s our favorite family time. We love sitting around the table, chatting, and enjoying each other’s company. In the summer, we sometimes linger after breakfast when there’s less to do. We've also tried having our family meeting and prayer time before breakfast, which means getting breakfast out quickly is even more important.
Efficient and nourishing breakfasts are crucial for our busy, creative family life. Parfaits, porridge, egg scrambles, and make-ahead dishes help us feed our large family quickly and deliciously. Breakfast is not just about food; it’s about starting the day together and creating cherished family moments.
